Yes it is do able and there are 2 routes you can take. You can take Highway 2 east towards Wenatchee WA and get on highway 97 south and Interstate 90 and then to Interstate 82 and either take Highway 12 west to Interstate 5 this route will take you close to Mt Rainer if you want to visit Mt Rainer. If you don't want to go that way then continue further south on highway 97 to Interstate 84 through the Columbia Gorge to get on Interstate 5. When I left Icicle RV Park towing my 37 foot fifth wheel last year I went to Mt Rainer for 3 days before proceeding to central Oregon and the coast to eventually wind up in Redwoods National Park in northern California before heading home to central California. So yes it is do able....

I submitted my answer before noticing you want recommendation on places to visit. I will list several. Washington Mt Rainer, Mt St Helens. If you go I-84 the Columbia River Gorge is beautiful and you can check out the river lock system on the Columbia River at The Dalles, Wind Sailing at Hood River, the Bonneville Dam tour and fish ladders and Mt Hood as well as Multnomah Falls and also Astoria at the mouth of the Columbia for beautiful ocean views. If you want there is also Portland. Along the coast is Florence for sand dunes, Winchester Bay for light house tour crabbing if in season and on Highway 38 is a Roosevelt Elk viewing area. Then further south is Coos Bay fishing and Bandon for beautiful coastal views. Gold Beach for Jet Boat Rides up the Rouge River. Hope this enough ideas....
